Apparently beans are the way to go! I’m not vegan but interested in reducing our meat consumption a lot. I heard about this campaign recently and it has a recipe section, so might provide some inspiration? I’m vegetarian and recently discovered blending silken tofu into sauces and soups for protein, its so tasty! Makes them taste creamy and its full of protein. As ruth said beans are great! I add butter beans to lots of sauces too plus mixed bean chilli is really tasty. The meat replacement products are generally really good now, things made with pea protein tend to be the highest in protein x

@Ruth its honestly a game changer. I blended it with a bag of frozen med veg ( cooked), some cajun spices and a bit of cheese the other day and it was a big hit!
Such a good question! We used to be mostly plant-based but have struggled so much to achieve well balanced meals so we are always resorting to fish, eggs meat etc! I would love to have more vegan options so following! One thing we do make is mushroom based fajitas with peppers onions avocado tomatoes fried beans etc…it’s a big mess but goes down well! 😅
