What should/can I make with these stale croissants?

Microwave them, throw some chocolate sauce, butter, or jelly in the middle

Croutons! Cut into crouton sized pieces, add olive oil to coat and whatever seasonings you like. Bake at 350 until crisp.

Bread pudding 😋

Depends on what you're making... anything using eggs like a "French toast idea.. should be just fine 1 after week date. Unless they have blue stuff on them. If not.. they are good to go!!
