Spaghetti squash (the one on the left) makes great noodle replacement for spaghetti! And the butternut squash roasted makes a great soup!
For my kids, I peel the butternut squash (it peels with a peeler like a potato), then I chop it into little cubes and put them in the steamer. For my husband, for either squash, I make one cut lengthwise, scoop out the guts and put them upside down (peel side up, like a dome) on a baking sheet in some water in the oven. Easy peasy.
