In water

Wash the greens. Start by washing the collards well in cold water to remove any sand or grit. Remove the stem. Slice along either side of the tough stem with a sharp chef’s knife, cutting the collard leaf in half while removing the stem. Alternatively, strip the leaves from the stalk using your hands. Cut into ribbons. Stack the collard green leaf halves in a pile and slice crosswise into thick ribbons.

10 to 12 cups  water 1  large or 2 small smoked ham hocks 3 cloves  garlic 2 medium bunches  collard greens 1  large yellow onion 2 tablespoons  rendered bacon fat or vegetable oil 1/8 teaspoon  red pepper flakes (optional) Kosher salt Freshly ground black pepper Apple cider vinegar, for serving (optional)

I’ve been summoned. 😈 Wash the greens. The stack up about 3-5 leaves at a time and roll them up then cut them into ribbons Take a red onion and dice. Take some bacon (I like beef bacon) and cut up In a pot with oil add the onion and let cook a few minutes then add the bacon and let it cook. And the greens and then a couple cups of water. Add 2-3 chicken bouillon cubes, bring to a boil then let simmer on low heat until cooked and tender. Adjust seasoning to your liking… I like to add a few dashes of adobe con sazon

Sauté onion garlic and tomatoes (trust the process here) Add about a cup of water 2 bouillon cubes smoked paprika thyme… sometimes I add a smidge of vinegar and maple syrup it makes the greens taste like bbq sauce Add chopped cleaned greens (don’t remove stem that soaks up all the yummy juiciness) to pot Put lid on Wait about 5-10 min before mixing them up Cook for about 30 min or until tender

For me I used smoked whole turkey wings…I pressure cook the smoked whole turkey wings for 50 min on high … Then I cut up bell pepper and onion minced garlic and sautée that in grapeseed oil… Add to pan tender smoked whole wing then chop meat and remove bones Add smoked paprika, onion powder roasted garlic powder, sea salt, a lil Cajun/ creole seasoning, black pepper then mix everything around with the sautéed onion 🧅 bell pepper 🫑 and garlic 🧄 Add cleaned (soaked washed in warm water and lemon Juice) sliced collards with stem removed repeat seasoning Then mix in and add juice from smoked whole turkey wings into pot…bring to a boil then let simmer until greens are tender Oh yes and add a bay leaf to your collards while they simmer

I added more smoked turkey broth because I like the juice…best collards of my life not playing
